How To Make Chewy Chocolate Chip Oatmeal Cookie Recipe

Before you begin, make sure you have all the ingredients for these yummy cookies.

The good thing is, most ingredients you probably already have in your pantry. Plus, it uses all real food and none of those processed chemicals that you find in store-bought desserts.

Feel free to use substitutes for any of the ingredients. Just keep in mind it may alter the taste or texture if you decide to do that.

1. Use Brown Butter In These Oatmeal Chocolate Chip Cookies

To start, you will want to brown your butter. Browning butter is the process of heating the butter until it turns dark and releases a nutty smell.

You definitely don’t want to skip this step because it gives the cookie a rich, deep flavor.

Whenever I brown butter, I find it easiest to do it on the stove over medium heat. It typically takes me 10-15 minutes for this amount. Just make sure you stir continuously to prevent it from burning on the bottom.

You’ll know when the butter is almost ready when it starts to feel gritty at the bottom of the pan. And once it reaches that deep brown color, you can take it off the heat.

2. Combine Butter, Sugar, Eggs For Soft And Chewy Chocolate Oatmeal Cookies

Let the brown butter cool off a bit then add to it a large mixing bowl. In that same bowl, add the sugar, one egg, one egg yolk, and vanilla extract.

One tip is to make sure the browned butter is officially cooled down before adding the eggs. Otherwise, the heat will cook the eggs.

Mix everything together until it’s all combined. The sugar will dissolve into the butter and egg mixture. You can opt to use an electric mixer to help stir everything easier.

3. Add in flour and oats, chocolate

The third step is to add in the flour, baking soda, salt, and old-fashioned oats.

Even though these are considered oatmeal cookies, this recipe still calls for flour. The flour helps hold the cookies together and gives them that soft, chewy texture.

I recommend using old fashioned oats to achieve the perfect texture. Old fashioned oats will give these chocolate chip oatmeal cookies the right amount of crunch. If you use instant oats instead, the cookies will become crumbly and not have the same texture.

When I add in the chocolate I rarely use exact measurements. Most of the time I eyeball the amount of chocolate I am craving. If you prefer more or less chocolate feel free to adjust the measurements.

5. Bake And Taste The Best Chewy Chocolate Chip Oatmeal Cookie Recipe!

Before you can bake the cookies, it is essential to let the cookies cool down in the refrigerator for 30 minutes to one hour.

Letting the dough refrigerate allows the fats to solidify in order to keep the round cookie shape as it cooks.

Once the dough is properly chilled, you can start to roll the dough in to balls and place on a cookie sheet. This batch amount about 10 medium-sized cookies.

Bake the oatmeal cookies at 350 degrees for 15 minutes, or until golden brown.

This chewy chocolate chip oatmeal cookie recipe is good for any family gathering or just as a late night snack. I often will make these cookies for birthdays, and people love how delicious they are.

Frequently Asked Questions

1. Why refrigerate cookie dough?

Letting the cookie dough cool down in the fridge before baking allows the fats in the dough to solidify. If you ignore this step, the dough can spread and become very thin as it bakes.

It’s recommended to leave the dough in the refrigerator for at least 30 minutes. Make sure to do this step to get thick, soft chocolate chip oatmeal cookies!

2. Why are my oatmeal chocolate chip cookies so hard?

The most likely scenario is that you overbaked the cookies. My number one tip is to pull the cookies out of the oven before they are fully done baking. Even if they are undercooked when you pull them out, they will continue to cook from the hot baking pan as they sit on the stove.

The second possibly is that you added too much flour to the mix. When you measure the flour, don’t pack it down in the measuring cup. Try to get just the right amount that the recipe calls for.

3. What makes oatmeal cookies chewy?

In simple terms, the secret to a chewy chocolate chip oatmeal cookie recipe is the moisture and fat balance.

The brown sugar helps to keep the cookie moist which in turn makes the cookies softer and more chewy. Additionally, using melted butter and adding an extra egg yolk helps with chewiness. (source: “How Can I Make Oatmeal Cookies Softer/ More Chewy?“)

From personal experience, I also have a habit of undercooking the cookies before I take them out of the oven. This way they will be just the perfect consistency!
