Chicken pot pie is the ultimate comfort meal. Make it on a cold, snowy day while you are bundled up indoors.

I initially found this recipe in my Gooseberry Patch calendar. Each month shares a new recipe to try, and this was for January. I enjoy trying new recipes, and thought this would be a fun tradition to start at the beginning of each month.

1. Pillsbury Chicken Pot Pie Crust

To start, you’ll want to roll out your pie crust and place it on the bottom of a 9-inch pie pan.

I ALWAYS recommend Pillsbury pie crusts. One, because it is so easy and saves time. And two, Pillsbury has the most delicious recipe that sticks together and doesn’t crumble when baked.

Of course you can make homemade crust if you prefer. A good pie crust is the backbone of any baked pie.

2. Chicken Chicken Pot Pie Filling Only

The ingredients for the filling include cooked chicken, vegetables, onions, sour cream, and cream of chicken soup.

Cream of chicken soup takes this old fashioned chicken pot pit recipe to the next level. So much flavor inside every bite. And best of all, it comes in a can!

I also thought the sour cream added a really nice flavor to the inside filling. Giving the pie a creamy, rich taste.

Mix all these ingredients together in a large bowl. Once everything is incorporated well, pour it into the pie dish.

3. Cream Of Chicken Pot Pie

The last step is to add the top pie crust.

The easiest way I found to do this is to fold the top crust under the bottom crust. This way, you get extra thick crust around the edges.

You’ll soon realize just how simple this recipe actually is! The prep work took me around 35 minutes, and now it’s time to bake it!

To bake chicken pot pie, preheat your oven to 350 degrees. Before you put the pie in, make sure to poke holes on the top for steam to come out of. I left my pie in the oven for approximately 45 minutes, until the top crust turned golden.

  • 9" pie pan

Ingredients
  

  • 2 Pie Crusts
  • 2-3 Cooked chicken breasts
  • 1/2 Onion, chopped
  • 2 cans Cream of chicken soup
  • 2 cups Mixed vegetables
  • 1/2 cup Sour cream
  • Salt and pepper to taste

Instructions
 

  • Line your 9" pie pan with one crust, set second crust aside for later.
  • In a large bowl, combine the vegetables, cooked chicken, chopped onion, cream of chicken soup, and sour cream. Stir to incorporate. Once the filing is mixed thoroughly, pour into the pie dish.
  • Top with the remaining crust, and crimp the edges to seal the two crusts together.
  • Bake at 350 degrees for 45 minutes, or until the crust is lightly browned.
